They grey stuff can't be classified as a dessert. It is a small blob of frosting/mousse, about an inch across.

When you're the leader, you don't have to follow.
Yep it seems to be setup for sheer convenience of service. Churn out a ton of cupcakes, stick them on a trolley and hand them out. Doesn't take much effort like a real dessert. It's a real missed opportunity to sell some $8 desserts.
We ate there during a soft opening last November. The dessert was the most disappointing part of the meal.
Personally, I think the limited selection brought directly to your table, is all about quicker turnover. It can take a full 20 -30 minutes to peruse a dessert menu, make your selection, and then wait for it to be prepared and delivered.
With the trolley, you can actually see your choices; and it is served to you in less than 30 seconds - wham, bam, thank you Sam, here's your bill, good-bye.

I was kind of disappointed with the selection of desserts too. As people have pointed out they really could have done a lot with the dessert since it is a loosely based "French" restaurant. But the chocolate cupcake was, I thought, really a rich chocolate mousse type of cake which I would probably have ordered anyway even if they had more selections.
