Today is Matthew’s 33rd birthday…!!!!!!! :joyfull:🎂🥳
For those that do not know, Matthew is our middle child (between oldest daughter Megan and youngest daughter Sarah).
He was born via c-section, 3 months early and in utero growth retarded, due to an umbilical issue. His birth weight was 1 lb. 4 oz., and he went to as low as 1 lb. 2 oz. near the beginning of his 4.5-month NICU stay. He also developed premature retinopathy while in the NICU and had to have an eye operation to save as much of his vision as they could, which extended his stay.
Shortly after we brought him home, he developed an RSV infection and ended up back in the NICU for 12 more days, before we finally brought him home to stay.
After we were finally able to bring him home, he was on a heart/apnea monitor for the next year, during the night. We also had oxygen on hand. The monitor had to be taken in once a month to be recalibrated as he grew, because his heart rate and breathing slowed, as is normal. We didn’t get much sleep towards the approach of each recalibration period because of the alarm sounding so often during the night. Sure, we could have simply shut the alarm off, but we knew we could never live with ourselves if that was the one time something went terribly wrong. I/we could write a book about his life, especially the first several years…what a ride, but beyond worth it.

He is on the autism spectrum and is legally blind. Although his glasses lenses are very thick, the legally blind aspect mostly has to do with his peripheral vision, due to the premature retinopathy. He sees more than well enough to not need a cane, or such.
He worked at a local Salvation Army store for 3 years, and has now been at a local Goodwill store for 5 years, for which he recently received a certificate and a pin, and was also chosen Employee of the Month…again…also coming with another pin.
He’s caring, empathetic, funny, silly, thoughtful………..
There aren’t enough words to show how proud we are of him…!!!!! :happy:

There was a Tim Hortons in the Mall of America, and their coffee was good and I liked the donuts. It was better when we went to Canada though. I don't know if the TH is still at the Mall as I haven't been there in a few years. The Dunkin' near us isn't very good, the donuts are always stale. Our grocery stores have pretty good in house bakeries and their donuts are yummy.

Krispy Kreme is massively overrated. To me, they are mostly air with glazing on it.
Now, saying that, I will probably have to leave the state since it is a home brand. There are surprisingly few stores in NC. One in downtown Raleigh, otherwise you buy them on a display kiosk in grocery stores. They say that they are delivered daily, but in the almost 15 years I have lived here I have only seen one Krispy Kreme truck delivering. Basically we must take their word for it. That means that we don't really know for sure just how fresh they are.
There are a lot of Dunkin's in the area.There are 16 Dunkin's in a 14 mile radius of the Raleigh area alone.

So, for his birthday dinner tonight, Matthew wanted to go to an Austin original restaurant called Ramen Tatsu-Ya. There is a location less than 10 minutes from our home. Megan, Daniel, Emmy and Audrey have gotten takeout from there before, but it was the first time any of us had eaten in the restaurant…!!! :)

And, my main, with some added miso marinated tofu. The dipping broth on the side was a great choice, as I could dip separate items into it, and add it to my ramen bowl as I pleased…

Also, there was a bit of a rainbow as we were headin’ home…!!! :)

All good points. Maybe this isn’t the case at all of them but the one closest to me has a ginormous conveyer belt that makes at least the glazed doughnuts fresh. And even when they’re not technically fresh they still taste higher quality to me.

I never had Tim Hortons. They tried and failed in my area due the overrated Dunkin Donuts

We actually have a relatively new Tim Hortons less than 15 mins. down the road from us, here in Round Rock, Texas. I pass it to and from taking Matthew to work. Although I drank coffee every morning on our last cruise, I rarely drink it in my regular daily life, so have never been to that Tim Hortons.
Plus, it looks like they only have a coupla’ donut choices, and the best donuts I’ve ever eaten in my life come from the place below, that I mentioned in a previous post, about 10 mins. down the road from us…!!!!!!! :joyfull::hungry::hungry::hungry:
