When you're the leader, you don't have to follow.
We’re a little sick of banana bran muffins, so today I baked sour cream chocolate chip muffins. I only had about 1/4 of one to taste test it, but yowza, these are good. Next up, blueberry, when these are done.

I didn’t bring any cooling racks, so the rack and pan from the toaster oven worked in a pinch.

That's a great trick, using the oven racks on top of the baking sheet to cool the muffins. (I guarantee I would have never thought of that substitution, if I didn't have my regular cooling racks available.) ;)

I never in my life was in any kitchen with any form of a cooling rack. When it came to cupcakes we just took them out of the pan and by some miracle they cooled while just sitting on the counter. I see the usefulness for some things (still not necessary but maybe handy). It just seem like in many cases it is just something else that needs cleaning.

It’s about preventing a soggy bottom … or something like that.

I am a horrible cook/baker, so I have to follow recipes to a T. If it says cool on a wire rack, I do it. Or I improvise.
