That's my mom's favorite lunch. Our tomatoes didn't ripen well this year. They grew big but took forever to turn green. Cucumbers, green beans, bell peppers, lettuce, onions, all good but tomatoes...nope. We even had an overabundance from our mulberry and apple trees.

No rhubarb.

I picked tomatoes yesterday before I left for work - put some on my turkey sandwich and made a small tomato salad with some cut up string cheese to go with it. I still have green tomatoes that are trying to ripen! I'm thinking this cold snap may be the death of them. I'm fine with that - it's been a LONG season.

  • Wrapping individual green tomatoes in newspaper and layering in a box, no more than 2 layers deep. Place the box in a dark, dry spot and check weekly for progress. It usually takes 3-4 weeks for the tomatoes to ripen, but check frequently and remove any fruits that show signs of rotting.


  • Placing the green tomatoes in a paper bag with a ripe apple. The apple gives off ethylene gas, which speeds up ripening. Check the bag daily.

Thanks Farmer trr1!! I didn't realize you could ripen from green. Cool.
