That's so funny, I never even thought about how you see him ripping the tracks after you already see them ripped. What were they thinking?

What was the steam train effect you mentioned?
They were thinking of giving you an explanation of why you stopped and why the track changes as you move back the same way you came. He rips up the track either in front or directly behind you.

Its both so you can't go back the way you came and you can't go forward so you duck out down the mountain and he takes one last swipe at you ala Indy
