It's hard to pick just one, but after a little thought it became pretty clear for me:
The original Imagination.
It's a fantastic dark ride that (pun intended) absolutely captured my imagination as a kid, and really drove home that Disney World, and especially EPCOT Center are a whole different world; real-life magic.

I would have to say Peter Pan's Flight. It is one of the first rides I went on as a child, and now that I go with my own children, it is one of the rides we never miss. Stepping in that ship and making that first turn past the shadow... a feeling that never gets old.
