Deliberately refraining from going with the obvious answer here, gonna say Epic Universe; hoping it exceeds the high expectations people in the theme park community have been tempering.
Though if we factor armchair-Imagineered parks into the equation, you could probably take one good guess what I would've answered with...

Third on Epic Universe, though frankly a visit to any Universal park that now has Super Nintendo World would be great. I’ve also never been to EPCOT but given some of the discussion on this site I gather it wouldn’t be a great time for a first visit
