Are you looking for earlier or later in the summer?
Star Wars weekend happens between May and the first weekend of June. This goes on at Hollywood Studios.
That's the only big thing I can think of that goes on.

My wife and I very much enjoy the "Sounds Like Summer" concert series at Epcot. Every weekend a different cover band, with enough variety that there's something for almost everyone.
2U, which covers U2, and Slippery When Wet, which covers Bon Jovi, are two that we never miss.

the 3rd and 4th of july they do a big fireworks show, there's the star wars weekend and summer concerts. i like that the parks are open so much later when staying on site. we go to the parks early in the morning until after lunch then we go back to the resort and do whatever then get cleaned up have a table service dinner then hit the parks again until closing then sometimes hit the pool or hot tub after park closing.
