It's been a looong time since I visited as a vegetarian. Disney is very accommodating with dietary challenges. You can get almost any salad made without meat and there are actually a lot of healthy/meatless choices built into most menus. If you find a restaurant that doesn't have a choice listed on the menu, chances are they have a choice they can whip up in a moments notice.
 
Tangerine Cafe is a favorite spot for me, vegetarian or no. I found the most in-park options at Epcot. If you google "vegetarian Disney" or "vegan Disney" there are multiple blogs and websites that are very detailed.

My DH had a veggie lasagna at Flying Fish Cafe this past August that he still raves about being his favorite meal of the whole trip (besides Via Napoli). He is not a vegetarian, just not a seafood fan. I know they change their menu but I am pretty sure they usually have a nice vegetarian entree to pick from.

Jiko is my favorite spot for a vegan or a vegetarian delight. Sanaa and Boma have a tremendous amount of offerings and the food is very good.
Magic Kingdom:
Columbia Harbor House has a good vegetarian chili and the Lighthouse sandwich is really great.
The buffet in Crystal Palace has a surprising great salad bar full of veggie delights.
Liberty Tree Tavern has and interesting and very tasty veggie burger. It is served with sweet potato fries. Not vegan but a nice vegetarian option.
Epcot:
You can a veggie dish just about anywhere but, my favorites...
Mushroom ravioli in the Living Seas was really good.
Sunshine Seasons...LOTS of veggie and vegan options
Tangerine Cafe has some of the best veggie/vegan counter service around
Japan has a full offering of items
Hollywood Studios:
Tough very tough to find anything decent.
I did try the macaroni with meatless meatball in 50's prime time was lacking. The meatballs were good the sauce was yucky.
Animal Kingdom:
Surprised I was to have a great veggie burger in Dino Land and Yak and Yeti has a few good vegetarian choices. I like the veggie lo-mein.

Recently in the Boardwalk shop I had a quinoa wrap with roasted veggies. I was delish.
