Israeli Couscous, Chicken and Kale Stew

2 Roasted skinless Chicken (chopped) about 2 cups *You can use a roast chicken from the Grocery Store
2 Carrots (diced)
1 Celery Stock (diced)
1 small Yellow Onion (diced) *Or whatever you have
3 to 4 Garlic Cloves (minced)
2 to 4 cups Kale (finely chopped)
2 cans of diced tomatoes
6 cups Chicken or Vegetable Broth *I do 3 cups of each
1 cup Lentils or any type of bean (prepped and/or drained and rinsed if canned) *I like to use a can of Navy Beans
3/4 cup dry Israeli Couscous
1/2 teaspoon Ground Cumin
1 teaspoon Savory
1/2 teaspoon Turmeric
2 to 3 tablespoons Olive Oil
Salt and Pepper (to taste) *I always season as I go

Extras to garnish:
Greek Yogurt or Sour Cream
Finely chopped Cilantro

In a large pot heat Olive Oil on Medium heat, add onion let sweat (about 2 - 5 minutes), then add Carrot and Celery and let caramelize (about 10 minutes) and season with a little Salt and Pepper.

Add Garlic, Cumin, Savory and Turmeric and allow to get fragrant (2 - 3 minutes)

Toss the chopped Chicken and stir well then add the Lentils or Beans

Add in the cans of diced tomatoes stir in well and then slowly add in the broth and bring to a boil

Turn down the heat and toss in the Couscous and Kale and let simmer on low (15 - 20 min)

Season with Salt and Pepper (to taste)

Then when ready to serve add a dollop of Greek Yogurt or Sour Cream and sprinkle the Cilantro on top.
*I also like Naan on the side.
