Not sure if I mentioned it here, but my wife grew up in Indonesia. Not far from the Philippines.

My mom is Chinese Filipino so I grew up on all kinds of Asian food especially when my Grandmother and Uncle were around. They were also both amazing cooks (as is my Mother) but my Uncle was especially talented as he was a Chef who owned a few restaurants in the Philippines and here in the US.

In regards to fast food, Filipinos were very happy when the first Jolliibee opened up in Jacksonville and in FL. People were lined up for hours before opening day.
