A HOT summer day calls for something cold, simple and didn't require turning on the oven so we made some Spring Rolls, Prawn toast and served it with a Asian Cucumber Salad (not pictured).

My mom is Chinese Filipino so I grew up on all kinds of Asian food especially when my Grandmother and Uncle were around. They were also both amazing cooks (as is my Mother) but my Uncle was especially talented as he was a Chef who owned a few restaurants in the Philippines and here in the US.

Tonight we kept it simple and made some hoagies and served them up with some onion rings.
Mine was deli sliced roast chicken with Pepper Jack cheese and marinated veggies.

In regards to fast food, Filipinos were very happy when the first Jolliibee opened up in Jacksonville and in FL. People were lined up for hours before opening day.
