This morning. Country ham biscuits, eggs and grits. I love breakfast. No, I did not eat all three biscuits, this was shared between the two of us, although, I probably could have easily.

OK, tonight for dinner I stepped up to the plate and knocked it out of the park. Now that the sports metaphor is over, here it is, bbq chicken, roasted veggies, pimento cheese mac&cheese and coleslaw. Quite tasty.

I was afraid the chicken might be a little tough seeing how the pieces were so big, but they were fine. A little dry around the edges as I cook to an internal temp of 170 and the edges were a bit overdone by the time the were fully cooked in the middle. The pimento cheese in the mac&cheese is a favorite of mine, Palmetto Cheese with jalapenos. It adds a nice punch to the mac&cheese and it is made with sharp cheddar.
The veggies were just some broccoli, potatoes and carrots, with spices and red pepper flakes, drizzled with olive oil and oven roasted for about 30 minutes. @figmentfan423 I bet you would have liked them.

My wife cleaned up the kitchen after I cooked tonight and she confirmed the meal was worth the mess. Sometimes it is not.

I know people rag on universal but toothsome is one of the best theme park resturants in Orlando.
