I’ve worked in the food business back in the day. The tricks we were told by the chef to be short on product and more in sauce and other cheap items to increase profit margins. I wouldn’t eat there on my own time. When San Angel Inn at Mexico / Epcot cut out the complimentary chips and salsa they now charge over $5 for chips salsa and guacamole if one wants to order before the meal comes.
