Tiki don't forget all the holiday offerings offered in all the parks.I was underwhelmed with Mine Train and could honestly entirely skip it next trip if I had to, haha. Pandora is one of those things you just have to accept will always have a wait, much like Cars Land at DCA. This trip I'm thinking about skipping Studios entirely. I had my fill of it last trip and nothing in Toy Story Land entices me to go back. This trip will mostly be Animal Kingdom focused since that's the park I got the least amount of time in, with of course at least one or two full days at MK and Epcot as well.
How are crowds closer to the end of December?
Epcot has their Holiday Food and Wine Festival, the Candlelight Processional, plenty of Holiday themed shows in each of the coutnries, and I think a special holiday tag at the end of Illuminations, but I could be wrong.
Studios has Jingle Bell, Jingle BAM!, Sunset Seasons Greetings, Frozen Sing-A-Long w/ Olaf's Frozen Adventure, and all the Christmas decor.
Magic Kingdom has the Jingle Cruise and Mickey's Very Merry Christmas Party, but that's an extra fee.
Animal Kingdom has a tree.
I'm not sure if changes anything for you, but if Magic Kingdom say it's closing at 6PM that's because of the Party. As for the week you're going in I was there last year that same week! Overall the crowds were rather manageable, and we never waited too long to ride anything. Just make sure to get your fastpasses, and bring Winter wear as the parks were pretty cold. One night there was a low in the 30's/40's if I'm not mistaken.
