Hi folks,Hoping to get a ADR for California Grill this year,and looking at the menu the seared bison has intrigued me.I love my steaks,from fillet to t-bones,but I've never tried bison,just wondering what it's like compared to. I would imagine it's a strong meat,like venison,but I could be way off.Has anyone had bison,and if so what's your best description? Cheers.

The bison/buffalo that I have had has actually been very similar to regular beef. It tends to be a bit leaner and maybe a bit sweeter than regular beef but does not have a "gamey" taste. Now, if they have Rocky Mountain Oysters on the menu give them a try and let me know how they were. I haven't had the courage to try those yet.

Very similar to Filet Mignon. The Cal Grill Bison is fantastic according to some friends who tried it a few weeks ago!

We have a place right near us up here in Maine that makes REALLY good Bison burgers. I was very nervous to try them out because I heard some wild game can taste just like that, very gamey. But the burger was very lean and no gamey taste at all. Tasted pretty much exactly like regular beef. If you try it, let me know how it is :wave:

Well I know what these are and my holiday insurance doesn't cover them.I once had this fish starter on a Greek island cause I was told it was a delicacy,turned out to be sea urchin eggs,remember that scene in Alien when the baby burst out of the guys stomach.thats what I felt like afterwards.:hurl:

I'll be dining there Next Friday Jan 20 and I was thinking of getting the Bison, I'll let you know how it is!!

Excellent,looking forward to your culinary blog,remember and ask your server how the chef recommends it cooked,eg,rare/med/well done etc.:slurp:

I have had the bison at Artist Point and I grill it at home sometimes.

Bison is very lean meat, similar to as someone mention filet migon. I enjoy it but sometimes I like a little more fat to my red meat.

I shall, but I hope he says rare. I like my meat rare :p

I believe at The California Grill they recommend the bison at a medium rare temp. It is absolutely fantastic, it just about beats the best beef fillet I've had anywhere.

I had the bison at CG in December and it was excellent. It seemed to be more like a leaner NY strip to me-- no gamey taste at all. I prefer my beef rare also, but medium-rare was fine for the bison. I would definitely have it again and recommend it.

Yum,yum.

Man am I hungry now,looks like med/rare is the best way to cook it so you get the best flavours of the meat,but I'll leave that to the chef.Last year we ate in an Italian restaurant in Cyprus where the chef would not cook any steak well done,the nearest he would do was med/well,even that looked rare/med but was one of the best steaks I've had.:slurp:

I've got an ADR for Cali Grill in May and I have been looking at getting the bison. As I like my steaks med/well, has anyone done this already and how was the taste?

Bison v Buffalo.

I asked an Australian friend of mine,what was the difference between a Bison and a Buffalo?.He paused for a few seconds then in his broad Australian accent replied,"well it's like this mate,you can wash your hands in a Bison,but not in a Buffalo".sorry folks,just had to get rid of that joke.:ROFLOL:

Might be the same place we get ours at. In GNG? Love those Bison Burgers.

The first time I ever had it was when we went to Artist Point, the server actually tried to talk me out of ordering the Bison because I like my steaks & burgers on the well done side. After hearing why well done doesn't work well with Bison, he advised me to order it Medium. Give it a try, like me you might be surprised at the taste and find a new love.

Well, I happen to like sea urchin - but it goes bad quickly.

I once went to a Filipino restaruant with a bunch of friends from the Philippines. I let them order. We all had big bowls of Soup #5. Later I looked up what it was. In all honesty is was pretty good. (I leave the Googling up to the gentle reader)

We are going to Cali Grill for the first time in March and I was interested in trying the Bison, after reading these reviews, I am def. going to be ordering it.
