Yup, soft open is when the attraction operates before the grand opening. It's often used to work the kinks out of the operation of the attraction, and to do some last minute adjustments. As for the week before grand opening, I'm not too sure of the proceedures. They'll probably be doing previews for the press and dignitaries within the company over that week, since the kinks will have mostly been worked out during soft open. There's still a great chance that you'll be able to see it.
