OK, my partner is 6'10", 410#, would he have problems getting on Space Mountain, Rocking Roller Coaster, 7DMT or even Peter Pan? He has never been and I don't want to embarrass him.
This is a special case, and I apologize in advance for my answer. Nearly 7" will likely be uncomfortable for most of these rides. My husband is 6'5" and he has given up on Space Mountain because his legs just don't fit. He barely fit on 7DMT, but I worry for your partner. RNRC should be ok, I remember the leg room being ok, my only concern would be if he is too tall for the restraints. Peter Pan, I remember legroom being tight, but maybe if he has the row to himself, he can sit with his legs to the side?

Good luck! For the most part, we've found WDW to be the most size-friendly park ever. Aside from SM, there is nothing we can't fit on!

No, just very large. Big boned, like a 6'10 football lineman.

I am 6'2" 280lbs. I fit on everything. I've been unable to go on rollercoasters at Six Flags and such, but never Disney. Now, I'm always tight on Space Mountain, and it is my height and legs, not my width, that does this. I was tight with my legs/knees on the Matterhorn at Disneyland for the same reasons. No big deal, I may have had a leg cramp after the Matterhorn for a second.

If he's 6'10" that's pretty tall. I am not saying he'll clunk his head off while on a ride but Thunder Mountain has always made me feel like I am getting my head chopped off. In reality I probably have a clear 2-3 feet above me. Who knows. Heck, a 6'10" guy stands out like a sore thumb. If he can't go on a ride, they'll notice him and tell him. But I think he will be fine anywhere. Just might need to really bend his legs.

In my experience if you have a "beer belly" you'll comfortably fit on anything at Disney (and most things at Universal). However, you'll run into trouble if you are a heavy build- as in if you carry a lot of weight around the rest of your body. I'm 6'2 and when I was last at Disney I was about 290 pounds (I've lost a lot of weight since so I don't know how applicable this will be next time I go). My shoulders are exceptionally large and wide and my legs carry most of my height. While I fit onto nearly all of the rides at Disney, I faced some difficulties with rides dealing with over-the-shoulder restraints such as Stitch's Great Escape and Rock n Roller Coaster, but I was able to ride after slouching in my seat.

I was still able to ride everything at Universal, but with the Hulk coaster and Forbidden Journey I needed the 'big-boy' seat- again owing to my shoulders and the restraints used, I fit into the actual seats just fine. But oddly enough I was able to very easily fit onto Rip-Ride Rocket which uses a 'over-the-belly' restraint.

Tl;dr if you have a large frame you might run into some difficulty, if you do slouch/suck in and more often than not, you'll be grand ;)

Ok, we just back from Disney World. My 6'10", 410 pound partner did get on some rides.

Splash Mountain was tight and I think he hurt his knee. The boat rides like It's a Small World and Pirates of the Caribbean he just got a row to himself. He said Kali River Rapids and Star Tours were very uncomfortable. Overall he had a great time!

I've been 300+ at Disney World & Land multiple times and have never had an issue. 7DMT is not a problem...uncomfortable...but not a problem per-se. I have since lost 40 pounds and I'm well on my way for being able to ride stuff and Universal again!

Thanx Guys! I'm definitely not 300lbs ( although in my mind I'm huge) just nervous because I've never been this big, and the last thing I would want is for my daughter not to be able to get on a ride because I won't fit. Maybe I'm just in my head, but this weight gain is messing with my mind. I guess I'll be on mission get back after my vacation.

You'll have no issues. The biggest challenges I've faced, and all are manageable, at your size and larger are:

Getting out of Space Mountain. - You'll have to swing your leg around the "T" restraint and sometimes you get a little stiff sitting there during the ride. I also have large feet. Solution: Get in the front seat of either of the two three person cars. It has slightly more leg room

Getting my seatbelt on where there is a seatbelt (Test Track, ToT, Star Tours, Soarin) Solution: Pull the belt all the way out, don't fully sit down in the seat until the belt is secured.
