What are some of the best attractions or activities throughout any of the parks that don’t include rides?

MK - Dapper Dans, Fireworks, Parade, Main Street philharmonic, Casey corner piano player. And then there is the treehouse, tiki room, country bears and presidents.

Epcot - Voices of Liberty, Jammitors, Mariachi Band, fireworks, the aquarium, American adventure, Moana water walk through.

Studios - not too much anymore. Beauty and the Beast, Indy and Fantasmic, muppets for now. Walking through galaxies edge has some nice moments.

DAK - animal trails (Asia is my favorite) flights of wonder bird show, Nemo, lion king, walking around the avatar land is very fun - lots to explore.

I would also recommend maybe watching an Imagineering Story before going, and then spend your time there looking for details, atmospheres, architectures, etc. There are so many hidden gems and you can spend hours in the parks just appreciating the environment and its details !!

Randomly, in no particular order...

There are a few fun spots to take your own photos around the parks, like outside the Rapunzel bathroom and the purple wall in Tomorrowland that are not quite the obvious spots like the castle.

The gold statues are still up in the parks from a few years back, or were up very recently. A number of them don't seem to work anymore, so I wouldn't buy the special Magicband just for that. There used to be a way to collect them in the app, but again with some not working, you can't collect them all.

There's also a game in Galaxy's Edge (w/ the bands and app) but I have not played, so I can't comment on it.

I don't know I'd call it best, but at some of the Photopass spots the photographers will do special poses, and add little digital extras to your Photopass photos, like an extra character. It can be sorta fun to see what shows up in the photos, but if you want to keep any of them it costs extra.

All the parks have character greets.

In addition to the already posted list of things in each park:
MK also has Monsters INC and Philarmagic shows
Epcot also has a band in Canada at times, shows/concerts in the America pavilion, also the new Commincore outdoor area (recently a DJ was performing there), and often lots of flowers (esp during the upcoming festival).

Above Epcot's aquarium was listed as one thing, but there are actually quite a few in the pavilion. There's the big one, but also a number of smaller ones, and most are salt water with all kinds of fish and critters.

In addition to the not-rides, another non-ride option for the bigger attractions is simply ask to use what is called the chicken exit after walking through the queue and pre-ride, especially good if you want to look for hidden Mickeys and other theming details. Some of the better queues are Expedition Everest, Toy Story Mania, and GoG all the way through the preshows.

Epcot's other pavilions have post-ride areas to explore, like Imagination where there's also the Pixar shorts theater. Just outside the theater is a fun jumping water fountain. Mission space also has a post-ride area. Spaceship Earth has a bunch of non-ride activities.

There's a wishing well near Cinderella Castle, and if the castle happens to be open, the murals are neat to see, but it is only open after the daytime shows are over.

Epcot also has seasonal scavenger hunts. You can do them for free, or you can pay to play and win a prize. The WS will have displays up if they are selling one during your visit.

Children can still collect items at the World Showcase Kidcot Stations. Currently the items are postcards with stickers for each country, and the CM's will usually personalize the postcards in some way. (Kidcot has changed over the years)

There are shopping experiences too - like creating an action figure of yourself as a Tron or Avatar figure. Or building a droid or light saber.

And of course, dining - including character meals. :)
I did the lightsaber building more just because it was something new I'd never done before, and it IS expensive, BUT! Savi's Workshop really is a very cool experience and you get a quality lightsaber that you choose the pieces for yourself. At least half of my group were Sith and I built a crunchy granola Elemental Nature lightsaber and I think I was the only one in my group that went that direction.

You can easily fill a day without ever going on a ride. Here are a few shows & experiences I don't think anyone has mentioned yet:
MK-Explore Tom Sawyer Island (while you can!) & Carousel of Progress
Epcot-Turtle Talk with Crush, Wonderous China, O Canada, Awesome Planet, Impressions de France, Beauty & the Beast Singalong
Studio-Mickey Shorts Theater, Walt Disney Presents, Star Wars Launch Bay, Frozen Singalong, Disney Jr. Play & Dance
AK-Animation Experience & Conservation Station at Rafiki's Planet Watch

Food and merch? JK
You can explore the world showcase at EPCOT.
The Seas pavilion in EPCOT (while it still exists) has a great aquarium!
Stop by Communicore in EPCOT if you have 5 minutes to spare.
There are nature trails in AK.
Visit the monorail resorts.
Visit Disney Springs.

Just to mention a few.

If you happen to be visiting over a holiday, the holiday decor can be fun. For upcoming Easter, the deluxe resorts usually have large chocolate Easter eggs decorated by the pastry chefs. Each one is a unique design, themed to Disney somehow, like characters, movies, or something else in WDW. Multiple resorts have them, but the best collection is usually GF followed maybe the BWK.

I'm surprised no-one's mentioned the A Pirate's Adventure: Treasure of the Seven Seas game at Magic Kingdom in Adventureland. Created at a similar time to Sorcerer's of the Magic Kingdom, it has you collect a physical treasure map keepsake with beautiful art of Adventureland, that takes you on a narrative-led scavenger hunt of tapping your MagicBand / park ticket / RFID-embedded card (if you can't use any of the aforementioned options) to touchpoint, triggering all sorts of special effects I won't trigger here because they're really cool to see in-person! There's something like 6 hunts to go on total that you unlock sequentially (so 6 treasure maps to collect), and it's stuck around all these years. Absolutely worth a try one day!
