Not clear if this is a "You get one ride....and you're out" type proposition OR if you can aimlessly wander around a park all day and only get to choose one ride.

If it's one and done, I go with ambiance over thrill (and classic).

As much as I love a Splash Mountain, I go with Wedway (TTA) as my choice for MK.
EPCOT - I go American Adventure and walk around one half of WS before the show and the other half after.
AK - Rafiki's Planet Watch
DHS - Star Wars Launch Bay

If I get to aimlessly wander around the park before going on my one ride, then it's thrill or classic:

MK - Splash
EPCOT - SSE
AK - Kilimanjaro
DHS - RnR (which may change after SWGE)

Here's the dirty little secret that fanboys don't like to admit...

The "working yeti" barely made a difference. It's annoying that they haven't/can't/won't fix it, but people grossly exaggerate the difference it actually made on the ride experience.

This is absolutely true. He moved/ waved at you a bit, but you're cruising past him so fast that it was barely noticeable. Truth is I didn't realize that he had broken down until someone told me. And this is from riding it before it was open to the public and quite a bit afterwards when I worked there.

I honestly don't see any reason for them to spend the huge amounts of money, the long downtime, and having to tear off half the mountain to fix something that most people wouldn't even realize had changed.
