Must do for dining

If you mean the Spirit of Aloha diner show - DO NOT, I repeat, DO NOT do it. It's awful. Way overpriced, eats up a good 2-3 hours of your afternoon/evening, food is pretty bleh, show is not good or authentic and is extremely cheesy and corny. Save your money and time and do something else where you will get more for your money and a much better experience (I always hear the Hoop-Dee-Doo Revue is great at Ft. Wilderness). If you've ever done a real luau in Hawai'i, the Disney one is a total farce. Probably my only negative thing to say about the Poly. I believe the older luaua show in the late 80's/early 90's was actually good. Not the current one, though.
You'll only go once. Would rather spend that money on the food trucks.

Also thinking about booking the river of light dining package?

Do you think this will give us a good overall experience?

I’ve found 3 weeks is not long enough in Orlando!

Where exactly are you staying and will you have your own transportation or solely relying on Disney transportation? Or the shuttle buses for the hotel where you'll be staying? Or will you be using taxis?

Only asking because if you have to rely on other transportation to get to where you need to go, unless you plan the extra time it'll take to get to a restaurant in a WDW resort/hotel, it might be a bit of a pain.

No worries, just didn't want to suggest anything that would wind up being inconvenient because you'd have to rely on other transportation besides a car you rented or a taxi you ordered.

Hoop De Do is a fun restaurant - make sure you let them know in advance you'll require at least some vegetarian options. And hopefully the vegetarians at your table aren't put off by others eating meat because it's mostly "bone-in" food, fried chicken and ribs with I think some skirt steak.

Boma is consistently one of the best and freshest buffets on property.

Dining at Rose & Crown at Epcot affords one nice amenity, access to their patio and private viewing for the nighttime fireworks. Even if you eat early, your receipt allows you to come back, perhaps be a little less crowded or using a fastpass for a prime viewing location

Likewise California Grill, aside from being one of the best restaurants in perhaps the Orlando area, also affords you the privilege of seeing the Magic Kingdom fireworks from their balcony or restaurant, even if you ate earlier in the evening.

One suggestion is Sanaa and the bread service. It is great and also good for vegetarians as well. Go there for a pre-dinner snack or a late night snack and experience a wonderful dish in a great atmosphere.

Hoop Dee doo is awesome but there's no skirt steak , I wish there was because I don't like ribs n chicken but we loveeee the show . The strawberry shortcake is the best I ever had
