Velocicoaster and Hagrid's don't rely on screens, but almost everything else they've built in the past 15 years does to some extent. Kong has a mix (as does Forbidden Journey and some others), but there are still whole sections of the ride where you just watch something on a screen. That hardly ever works for me (there are exceptions, but they're rare).
Sure, but saying "most everything that have built in the past 15 years" is very different from what you said earlier, "Universal has really shifted hard towards using a ton of screens with most of their new rides."

Universal's 2 newest rides are not screen based. It is more accurate to say Universal's newest rides have shifted away from using screens, than to say they have shifted towards a heavier use of screens.

Plus Universal even said for the upcoming rides and new park epic universe they will rely less on screens and more on AA's and sets. Disney however with rides like Web Slingers and Ratatouille are focusing more on screens.
