Please help me make my itinerary...

My family of 5 will fly in on 8/25/12 & depart on 9/2/12.

We will be staying at POR.
We will not visit a park on our arrival or departure dates.
We do not book a TS for our arrival or departure dates.
We will not purchase the park hopper.
We may or may not purchase the waterparks & more option (won't decide until arrival date).
We will go to one park per day, except for one day that we will set aside for downtime.
We are considering evening EMHs for any park, but not morning EMHs.
We are on the DDP.

Our restaurants of choice are:
Crystal Palace for dinner (would like to see Electrical Light Parade after dinner)
Chef Mickey's for dinner
Whispering Canyon for dinner
'Ohana for dinner (would like to watch Wishes after dinner)
Captain's Grille for dinner
Sci-Fi for dinner
Teppan Edo for lunch or dinner
Cape May Cafe for dinner (guys) - must eat there on Mon, Wed, or Sat to get fried shrimp
Princess Storybook for dinner (girls)

Some things that we would like to see & do at least once:
Wishes
Electrical Light Parade
Chip & Dale's Campfire Sing-Along
Illuminations
Fantasmic
visit DTD
visit Beaches & Cream for ice cream
visit the Boardwalk at night
swim in resort pool

Thank you!

Okay, I'm up for the challenge. :D

Saturday August 25: Arrive at POR. Take the boat over to DTD and do your shopping, then that evening, head over to Ft Wilderness for the campfire singalong. That doesn't count as a Table service dinner does it?

Sunday August 25: Epcot for first part of the day, and do lunch at Teppan Edo. Go back to the hotel for midday break, swim in the pool, etc. Go to Chef Mickey's for dinner.

Monday August 26: Animal Kingdom until midday break. Depending on how long it takes you to do AK, maybe go to Beaches and Creme for Ice Cream. Do your Cape May supper that night, and then see the Boardwalk at night.

Tuesday August 27: Disney's Hollywood Studios and supper at Sci-Fi. Maybe do a midday break in there. Maybe take the boat over to the Beach Club for Beaches and Cream if you don't want to do that on Monday. Do Fantasmic this night (or do they still only offer it on certain nights?)

Wednesday August 28: Make this your do nothing day. Do more pool time, go to DTD again, go to Beaches and Cream if you still have not done so. Supper at Whispering Canyon. Possibly back into DHS for Fantasmic if it wasn't offered the night before.

Thursday August 29: Magic Kingdom. Supper at Crystal Palace and the electrical light parade.

Friday August 30: Epcot all day and evening and evening EMH. Do Illuminations and supper at the Princess Storybook Dinner.

Saturday August 31: Do whatever theme park you might want to visit again, or any waterpark you might want to do, or whatever. Supper at Captain's Grill. Possibly do Fantasmic if it is offered tonight and not either of the other two nights I mentioned.

Sunday September 1: Magic Kingdom all day and evening. Supper at Ohana followed by Wishes.

I think I included everything that you mentioned. Does it look doable to you?

Great advice!...Should we not do the evening EMHs @ MK or DHS?

I wouldn't say that. That's just a sample itinerary I made trying to keep in mind all the criteria that you mentioned. I wasn't sure if you're one of those who likes to do MK last, or what your preferences are, but the above itinerary is just one idea of how to incorporate all your preferences. Initially, I had you doing Epcot on Sunday morning, then back into Magic Kingdom that night for Crystal Palace and EMH, but then I remembered you aren't parkhopping. So I scrapped the evening portion of that day, rather than the morning portion. But if you want to swap an Epcot day with a Magic Kingdom day and do the Magic Kingdom on Sunday (which is usually evening EMH night) that would be fine too.

I have nothing against evening EMH at MK or DHS, although we usually don't manage to fit that into our itinerary. I guess for us, we usually make Sunday our day to stay out of the parks, and we normally do at least two big days at the Magic Kingdom anyway, so going in for EMH on Sunday night isn't generally a priority. I've mentioned before about doing it, and then we just never do.

Here is another sample itinerary if you are interested in EMH evenings at MK and DHS:

Saturday August 25: same as before

Sunday August 26: Magic Kingdom all day and evening including EMH, supper at Crystal Palace and the electric light parade. Maybe a midday break in there in which you go back for pool time at your resort.

Monday August 27: Hollywood Studios, including EMH and Sci-Fi Drive in. Depending on how much time you need to spend at DHS, maybe you can do Beaches and Cream either before you go to the park, or during a midday break. Hopefully Fantasmic will be playing this night.

Tuesday August 27: Epcot, including lunch at Teppan Edo. Depending on how long you want to be at Epcot (since you will be there again on Friday), you might leave in the evening for supper at Captain's Grill or Whispering Canyon.

Wednesday August 28: make this your downtime day. In the evening, have supper at Cape May Cafe and hang out at the Boardwalk at night. Another possible day for Beaches and Cream if you don't make it there on Tuesday.

Thursday August 29: Animal Kingdom and then supper at Whispering Canyon or Captain's Grill (whichever one you did not do on Tuesday).

Friday August 30: Epcot all day and evening, including EMH and the storybook supper at Norway, and Illuminations. Another possibl day for Beaches and Cream, if you want to break away from the park for a while since you'll be there for EMH as well.

Saturday August 31: Any theme park you want to visit, Chef Mickey's for supper. Another possibility for Fantasmic if it hasn't played on either of the other nights I mentioned and if it is available this night. Another possibility for Beaches and Cream

Sunday September 1: Have supper at Ohana. Do you plan to watch Wishes from the hotel, or at the Magic Kingdom itself? If you plan to watch Wishes from the Poly, then you can make this another wild card day to visit whatever theme park you feel you need to spend more time at. Yet another possible day for Beaches and Cream if you didn't work it in on any of the other days.

I think I still managed to include everything that you mentioned. I might not have specifically mentioned pool time most of the time, but pretty much any of those days you could work in pool time. If it's a theme park day, you could do a midday break for the pool, or after you're done for the day at the park, or you could do pool time on the wild card days. I didn't actually look at the EMH schedule, but I am assumming that Sunday night is EMH night at MK like it normally is, Monday night for DHS and Friday night for Epcot. If not, then scrap this itinerary. lol
