SpaceShip Earth (our history should never be forgotten, though update the ending)
Carousel of Progress (ditto)
El Rio del Tiempo (one of the last vestiges of the original Epcot)
Swiss Family Treehouse (I hate Tarzan)
Great Movie Ride (nothing is more classic than going through the movies, though it can use a change)
I'd also save the Hall of Presidents and The American Adventure

Bring Back:
20,000 Leagues Under the Sea (did anyone not like that ride?)
Journey Into Imagination
Alien Encounter
The original Tiki Room
SuperStar Television

5. The old Sound Attraction with Chevy Chase (I can't remember the name)
6. The Hunchback of Notre Dame show
7. Replace the WDW version of Pirates with the vastly superior Disneyland

My big 3 are:

1.) The Great Movie Ride. It could stand to be updated, but I still love it and the montage at the end always pumps me up.

2.) MuppetVision 3-D. Now that I've heard that this is on the chop watch, I must say that I would love to see it remain. I'm a big Muppet fan and I would hate to see this go.

3.) The clubs at Pleasure Island. I know that they probably don't fit into this thread, but with all I've been hearing about, I want these clubs to remain. Due to my various personal problems and work commitments, I don't really get out. This is my one chance every year to get out and do my thing. I would like to see some updates, though. I want them to eliminate the song "Those Were The Days" from Samantha Sterling's show at the Adventurers' Club (Way too downbeat, even with the retooled lyrics). I also want to see them add more 80s artists to the playlist at 8Trax (How about some Five Star or Paul Hardcastle?).

Use the 20k lagoon for something worthwhile...

I rode 20,000 Leagues Under the Sea only once, at Disneyland, when I was about eight years old. I recall being manifestly unimpressed and incredibly let down: "There are no real fish! Those clams are made out of concrete and wire! We aren't even under water--if I stood up, my head would be above the surface!"

Save the one essential component of each park (plus one extra for the Magic Kingdom):

Pirates of the Carribean
Haunted Mansion
Tower of Terror
Kilimanjaro Safari
American Adventure

Bring Back:

Alien Encounter
Breakfast at Tony's Townsquare
The styracosaurus statue and shallow pool in front of Countdown to Extinction--and the original name of the attraction
The original animation tour
The double decker busses at EPCOT

Though I have several I would save....to me Disney is about being a kid at heart...and when I was a kid...the one thing I had to do when I went to Disney is ride Dumbo....so of all the rides I'd save....I personally can't imagine Magic Kingdom without Dumbo soaring behing Cinderella Castle.

5. Impressions de France (There is just something about this movie that pulls me in every time, I love it!)

4. Kitchen Kabaret
5. Dreamflight
