I cannot remember whether this was said on here by someone in the know, or whether it was just armchair imagineering by someone, but was it not said that when Mysterious Island was planned to come to Animal Kingdom, that the Lava Monster was going to be replaced by a dragon?

That's correct (as past @marni1971 reports). It could have been anything though as I understand.
