Damn so close! What's the odds a lay-person like me could catch a soft opening roughly a week before? We leave on the 23rd May. Is there usually soft openings before known opening dates where random park goers can jump on?
Your best bet is to walk up to the person (if there is one) at the entrance of the ride and say something like “if you need anyone to test this out, I will take that risk for you… you don’t even have to pay me!”

No but seriously, it doesn’t happen often anymore, but there’s no harm in asking.

Disney Annual Passholder Park Pass reservations at capacity for Guardians of the Galaxy Cosmic Rewind's May 27 opening​

I was checking the AP park reservation availability for Epcot in May and noticed that there aren’t any available for May 16, 18 and 20. Could these dates be set aside for AP previews?

It's possible, but I think they are going to need much more than 3 days. I would think at minimum a week of AP previews.

I enjoy Ratatouille, but think the attraction could largely function without being a trackless ride.

I‘m not sure how GOTG AP previews will go, but I know that for Remy, you didn’t need to book a park reservation for your preview day. Disney automatically made one for you.

Has there been any other source claiming no animatronics besides you-know-where? Or must we wait for the previews for confirmation?
Are you kidding? If there was a Groot statue that just blinked his eyes, Zach would going live 24/7 to document this amazing moment in Epcot history and explain the dozens of trips the Imagineers took to Marvel to fully understand the backstory of the character and the tree's range of eye motion.
