Gluten Free Dining

My wife has Celiac's, and we found most restaurants at WDW to be extremely understanding and accomodating of her need to have gluten free meals. We only ate at Table Service restaurants (Coral Reef, Grand Floridian Cafe, California Grill, Citricos, Jiko), and we just told the server, and they sent the chef out and suggested various dishes. They always made up something special for her, and it was always great. The fact that she is a vegetarian and is also allergic to soy made it even more difficult, but the chefs at WDW were fantastic!

I, too, need to eat gluten free (Celiac). WDW is a great place to dine when you have this! The chefs were very attentive, and when I made my new booking for my room-only, the CM at CRO still had it noted on my file and reminded me to mention it when I can make by ADRs. I had no problems at all, even at counter service.

It's a protein found in certain grains, namely wheat, oat, rye, and barley. Some people cannot properly digest these proteins, so they must search for alternatives, such as bread and/or pasta made from rice or bean flours.
No Barley.....that means no beer....:(
