The only free stuff that I am aware of are the prizes that WDW is giving out for the YOMD.
They will also give you a b-day button if it's your b-day day.
That's all I know of.

You can actually get a button for an assortment of reasons: 1st visit, Magical Gathering, anniversary, honeymoon/newlyweds, etc.

Well Disney just gave free meals with the purchase of hotel rooms for specific dates. Free Soda in club cool which used to be the big Ice Cave in Epcot. There are the Kidcot souvenir's in Epcot. Mickey Stickers, Buttons for most occasions. Monorail Licenses, EMH Wristbands, Maps in just about any language, free small Nintendo DS games at download stations around the park(or they will be soon).

Well EMH wristbands are what you need to get into the evening Extra Magic Hours. You need to be staying on Disney property, and all you do is show your room key.
I don't think they make great souveniers though. They're like hospital wristbands.
And you get a monorail license for riding in the front of the monorail, right?
I'm not sure about free plastic ice cubes in Epcot. I know you can buy glowing plastic ice cubes at some restaurants.

KidCot Souvenir's are at the KidCot stations inside of the countries in Epcot. Basically, they're usually almost like Mardi Gras masks that you can take around the countries to different KidCot Stops where kids can make some sort of small craft along with getting a stamp for their mask. Monorail Licenses you can get by sitting in the front of the monorail which you usually have to ask for and hope no one else is sitting there.

EMH Wristbands are just small plastic wristbands which you get in order to participate in Extra Magic Hours if you are staying at a Disney Resort(It's more of a collector's thing if you wanted to hold onto it as a memory of your night). They are in every park depending on where Extra Magic Hours are that night.

The DS games, as far as I know right now Pirates is the only place, but if you own the Pirates game for DS you can download small VideoGames somewhere in Pirates of the Carribean vacinity. I don't believe they have done this with any other attraction yet.

I alomst forgot Free Park Maps! I always bring home a couple of extras to have in case someone I know is planning a trip. It helps them get an idea of what to expect in the Parks.

Right before I left in February, my 5 year old nephew told me to remember to get a map so I wouldn't get lost. So I brought him a set of each park map, and he loved those more than all the real goodies I got him. He spread them all out on the floor and made me tell him all about the places.
He'll be tagging along on our next trip =)

Yes, you have to pay for the glowing ice cubes. In the 50s Prime Time, I got a kids souvenier cup, refillable soda, and the ice cube for about $6.
