First Day

Probably arriving @ 2pm. Could just hang out @ resort (Art of Animation). Don't want to use one of our park days just for a few evening hours. Was thinking of going to dinner @ a resort but which one. We've been to O'hanna @ the Polynesian. Any other ideas. Thanks

You could head over to Disney Springs

Art of Animation is a fun resort to pool hop in and that could take a couple hours

Could do dinner at the Wilderness Campgrounds at that restaurant over there (trails end?) and take the boat.

Could hit the boardwalk if you’re all adults and go to the piano bar.

If you do the Poly you can see the fireworks from their beach

This. All of these are good suggestions. Disney Springs would be my choice I think though. Lots to see and there's a variety of decent dining options. You could easily spend the whole evening there doing different things.

Geyser Pointe at Wilderness Lodge. Good food and nice atmosphere. You could stick around for the water parade right on the lake!
