We're off to WDW in October and would like to eat at Chef Mickeys before going to see the MK fireworks, but not sure what night the fireworks are on?

If you go on the wdw website and click on the calender. Then, you click magic kingdom for October. If you click on the individual days, they will tell you what time wishes is at for that day.

Fireworks every night. Some differences in content and timing for MNSSHP nights. As was said, check the Disney website closer to your visit. Also, when at the parks, pick up an event schedule (near where maps are handed out or at any store checkout) that will give times for all performances for the week.
