You are not going to find good Hollandaise at almost any place in WDW. I can pretty much guarantee that anay place (except for maybe V&A) is not making Hollandiase to order, so that means one of two things.
1) They are using a mix - and if that is the case, then why bother.
2) They are making it in bulk and holding it for service, in which case it is the worlds biggest perti dish.
Hollandiase has to be kept warm, not cold, not hot, but warm. The problem is, that warm temp, with all that liquid and protien - it is just begging to become a crock pot of bacteria.
I love eggs Bennedict and I am far from being food adverse. Raw shellfish, raw fish, rare meat (even burgers), steak tartare, sukiyaki (with raw egg) it's all good. Hollandaise away from home I tend to steer clear of (most times, sometimes I will break down and eat it) - same goes for mussels - I love them, but thats another dicey dish to otder out.
