As an adult that has never been to WDW with a child, I would never miss Pirates, Tiki Room, the what we call "kid" rides in Fantasyland and to be really adult don't miss the rainbow Marguaritas from the Mexico pavilion in Epcot. All other rides and attractions are a given for any adult. Try to do as much as you can, for your first time nothing is worth a miss.
