I indulge in WDW. There's a balance between eating everything in sight and eating to keep yourself going. Especially with things like soda and sweets. At home, I stay off of them, don't even have them in the house, because its too big of a temptation. But at WDW, I allow myself to enjoy them. For every cupcake or large Coca-Cola, I opt for the carrot sticks or apple slices and a bottle of water with lunch.

Between my husband and I, I'd say he definitely goes more crazy. I'd like to think I don't care about my diet on vacation and, while it is true that I eat things I wouldn't eat at home, but I never eat all of what I'm eating. I eat about half, maybe 3/4s of what I'm eating. Meanwhile, DH eats all of his and the rest of mine, no matter what it is! :p

For us, we do enjoy the great meals at California grille, or Ohanas, but we do it in moderation. We find ourselves splitting meals, having an appetizer like sushi, and just enjoying the meal. The only time we splurge on food is our morning character breakfast, but the fruit makes up for it, right?:D

We need time for things to happen.
My wife and I both watch what we eat while on vacation, and by "watch what we eat" I mean I watch her chow down on a funnel cake from SH, She watches me engulf a red velvet cupcake from SR, and so on and so on...

Taking a break from day to day routine, including a break from watching what you eat is exactly what a vacation is all about.

So for the Men vs. Women dietary decision battle in the "Jones" household it's a tie --- we both enjoy ourselves and let the healthy diet gods be d*mned.
