Anytime between Jan and March should be relatively slow, I have had pretty good luck using
http://www.isitpacked.com/disneyland-crowd-forecast-predictor-calendar/. One thing I find funny is DL will often feel busier than WDW but the lines are almost always much shorter. A couple things to consider when picking a time to go during slow season is it's refurb season so check the refurb schedule, the fireworks and F! might only be showing on the weekends so check the entertainment schedule, and the runDisney Star Wars half marathon weekend is the 2nd week in January so that will be a good weekend to avoid unless you are running with us, the runDisney events are amazingly fun!
Blue Bayou is DL's must do TS, great food and the setting can't be beat. The DL hotels have a few really good restaurants and there are a handful of sit-down restaurants inside the parks but IMHO dining isn't a huge part of a DL vacation like it is at WDW. At WDW I always have a TS meal for dinner but I rarely eat anything but CS at DL, WDW has a much better TS selection but I think the CS offerings are better at DL. My favorites are the Fortune Cookery at DCA and the Riverbelle Terrace at DL.
As you noticed another major difference is the hotels, all the DL hotels are similar in price to the deluxe hotels at WDW, fortunately there are dozens of nice hotels just outside the parks for economy to moderate prices. One thing I love is everything is walking distance, park hopping is a couple minute walk, going back to your hotel is a 5-10 minute walk, Downtown Disney is a couple minute walk, because everything is so close it's very easy to get everywhere. It just stinks you have to leave the Disney bubble to get an affordable hotel room.
