All of those lands have been tinkered with in some way since Walt's passing, so they aren't exactly "Walt's stuff" anymore other than in name only. That however doesn't mean they are completely gutting them. So outside of some plussing, like they've done with NOS, I doubt they are going to completely retheme any of those lands.
Yes they plussed many rides but in ways that have only increased their ability to stand in a world of more modern attractions. The Update done in the 80s even made the ones doing it cringe a bit but it turned out creating something more immersive and classy than the 50s tents that are now out of date in theme parks. But I mean Mr Toad is still Mr Toad, etc. Sometimes parts of rides even return like some narration in POTC ("perhaps ye knows too much...." segment)

I don't have faith in the current team at the moment. The leadership seems to be creatively dry or at least too "play it safe" for this type of business.

However, things like the Tiki room which is historic being the first real AA attraction, and things like that, They should remain.

I think all the mountains and Indy should be preserved as well. Perhaps not untouchable like the others you mentioned but damn close.

It’s probably a forgone conclusion that Matterhorn will need to be rebuilt at some point. I’d be ok with them rebuilding it from the ground up if forced but the question is would that even be possible in that footprint with modern laws / regulations? I cannot imagine Disneyland without the Matterhorn. The lagoon and monorail need to be preserved as well.

Honestly, even if it had to close as a Roller coaster in a few decades and couldn't be rebuilt properly due to regulations, just tear it down, and rebuild it as a walk through. Make it look identical. But I have to imagine Disney would be able to work with the State and find a way to keep it compliant. There's probably some loophole where if they leave enough of the original structure intact or something it could be considered the same structure even if 95% of it is a new build or something. I wouldn't be surprised if it also had protections as a historical landmark due to its history. If it doesn't Disney should really be trying to get it something.

I’m ok with minor updates (and even an appropriate IP’ification if necessary) to Thunder. If we’re saying that the ROA is untouchable then we’re also saying BTMRR is untouchable because what would they put in that plot that would be better?

Big Thunder is an IP- and it's a Disney Parks IP so I'd hate it if they slapped on some random film IP.
I’m ok with an IPification of Space if necessary. Perhaps even a complete modernization and rebuild if I trust the regime enough and they re able to use some more real estate to make it better although I’m not sure there’s enough real estate unless they just decide to make Space Mountain the big “new” E ticket. All this talk of adding a new E ticket to TL but what if they used Launch Bay and some of the other underused TL real estate to make a bigger better Space Mountain?

I think Hyperspace Mountain allows them to get their IP fix while preserving the actual attraction (which is really only like 20 years old at this point so should still have a few decades to go before it ages out). It's an incredible coaster and shouldn't be touched other than improving the effects. It's also among their top rated at the park.
Indiana Jones should always have a home there in Adventureland even if the story changes and effects gets upgraded.

Man, Indy is as classic as they come. It's really a sort of miracle, I'd say it's transcended the status of 'typical theme park attraction' and is inline with 'borderline religious experience for parks fans'. Pirates, Mansion, Splash, Indy, Storybookland, the Fantasyland dark rides, heck even walking down Main Street are all experiences that are greater than the sum of their parts. The connection they have with riders is second to none, and something Universal doesn't even come close too (except for maybe Harry Potter, but I'd argue that's not going to be as timeless). Disney really needs to take a step back for the next couple years, let the dust settle, and really figure out what parts of Disneyland shouldn't be messed with for a while. But who are we kidding, they just made more changes to Mansion and I'd be my left kidney more changes are coming to Pirates soon. They just can't help themselves.

Tiki Room should always have a home even if the show needs to be updated. As long as the main theme song stays.

Wasn't a seasonal show rumored at some point? But isn't feasible because it's at the entrance of Adventureland and would be a huge choke point for crowds? My hope is that it's safe because of it's location. That said, the progressive committee that's bent on destroying great work is probably salivating at the thought of driving a bulldozer through that theater.
