They don't have set seating hours, but they have set operating hours. Each day you get a "Personal Navigator" in your state room. It has a TV Guide like grid listing the times for all events the next day, and the dining hours.

An example is as follows

BREAKFAST
Goofy's Galley - 7:00 AM - 9:00 AM
Beach Blanket Buffet - 7:30 AM - 10:30 AM
Parrot Cay Buffet - 8:00 AM - 10:00 AM
Tritons (A la Carte) - 8:00 AM - 9:30 AM

LUNCH
Goofy's Galley - 11:00 AM - 7:00 PM
Pinocchio's Pizza - 11:00 AM - 6:00 PM
Pluto's Dog House - 11:00 AM - 6:00 PM
Tritons (Al la carte) - 12:00 PM - 1:30 PM
Beach Blanket Buffet - 12:00 PM - 2:15 PM

DINNER
Animators Pallette - 5:45 and 8:15 (these are assigned rotation only)
Tritons - 5:45 and 8:15 (these are assigned rotation only)
Parrot Cay - 5:45 and 8:15 (these are assigned rotation only)
Plutos Dog House - 6:30 PM - 9:30 PM
Beach Blanket (Al la carte) - 6:30 PM - 8:30 PM (it switches to walk up table service for dinner)

LATE NIGHT
Goofy's Galley (Ice Cream only) 7:00 PM - 9:30 PM
Pinocchio's Pizza - 9:30 PM - 12:30 PM
Pirate Deck Party Buffet - 10:30 PM - 11:15 PM (This was the night they were having the Pirates in the Carribbean party, so there was a buffet set up on deck - this is not a nightly thing)

ADDED FEATURES
Beverage Station - 24 Hours
Room Service - 24 Hours


As other have said everything is free except for the following

1) Alcohol - from anywhere on the ship
2) If you dine at Palo in place of your normal dining rotation, there is an upcharge. I believe it is still $10 per person
3) Soda and water from ROOM SERVICE is not free. All other soda and water - including the 24 hours beverage stations on deck - are free.
4) While room service is free, you should really tip them, as they are not included in the tip-out that you do at the end of the cruise.

On the night before your last full day they will leave four envelopes in your room for the following people.

Your porter (room attendent)
Head Waiter (this is the person in charge of all waiters in the dining room)
Main Waiter (your main waiter for your table)
Assistant Waiter (your assistant waiter for your table)

Your wait staff will follow you your entire cruise, so they get to know what your likes/dislikes are. My kids would order shirely temples and ask for extra cherries. By the second night of the cruise, we when would sit down at the table, there would be two shirely temples loaded with cherries waiting for them.

Anyway. There are suggested tip amounts for each person (based on the number of days, and number of people in your party) You can use cash in the envelopes, or if you wish to use a credit card, you can go to the Services Desk and charge it, and they will give you slips of paper with the amount on it that you can put in the envelope.

You then hand the envelopes to your servers at the last dinner service and you tip your porter whenever you find him. You can either leave it in your state room, or find him or her in person. They tend to roam up and down the section of the hall they are responsible for. Just like the wait staff, you have the same porter for the duration of the cruise.

I am not sure how they do it if you pre-pay the tips. Maybe they have the slips available at the desk for you.

Just to clarify, there is no bill at the end - unless you have charged items to your stateroom.

If that is the case, it is just like staying at WDW. They will have a credit card on file, and you will get a statement under your door with the list of everything you bought.

If you decide to use cash to tip the staff, there is no need to go to the Services Desk at all. You leave you bags in the hall the night before your last day, the on-board shops all close down the night before, so there is nothing to buy on the morning of the last day. When you wake up, your bags are gone and your statement is in your room. You go eat breakfast, go back to the room, get your carry-on (off), disembark, and pick your 'checked' luggage up in the cruise port.

I noticed I made a mistake here.

Soda / water / ice tea is free on deck at the beverage station, it is free in the restaruants (buffet and dining rotation). The 'snacky' places (burger, pizza, etc) don't have drinks. You have to walk 50 feet to the beverage station :)

However.....

As I said, all alcohol is not free. Neither is soda from room service. And .... This is what I forgot. ANY drink (soft or alcoholic) that your order in one of the bars/lounges is not free either.

If you pre-pay the tips, the same four envelopes are left in your room, except they have cards in them stating that the tips were pre-paid.

Yep

Both times we cruised our head waiter would stop by the table at least once a meal and ask how everything was.

Our Waiter and Assistant waiter were around all the time.
