I don't know what exactly you are looking for, but here are my suggestions:
First, look at the menus on here and allearsnet.com, plus the reviews. This will give you a good idea of what they have.
I have a very picky eater in my family. Buffets work well as there is always something he will eat. Most places will also have stuff that isn't on the menu, like grilled cheese (toasted cheese on a bun at CS), plain pasta, french fries etc. You can always ask.
Now for our favorites (if you have a picky eater with you):
MK:
Crystal Palace and Liberty Tree Tavern (both lunch and dinner) for sit-down.
Starlight Cafe for CS
Epcot:
LeCellier (they have plain pasta!)
Ocktoberfest for most except for the boy who only likes pasta
Sunshine Seasons, lots of choices for CS
DHS
50's Prime Time Cafe for sit-down
We are trying Hollywood and Vine buffet for the first time in April so can't comment yet.
Really not thrilled with any CS here, sorry.

Yak and Yeti was very good but not sure how a picky eater would do here.
We love Flame Tree BBQ and the kids always want to go to Pizzafari. The CS in Dinoland was a hit, too as it has burgers and grilled cheese. (can't remember name)
In Resorts:
Chef Mickey's is a fun buffet
1900 Park fare dinner was a huge hit with everyone, very good food
Any breakfast buffet in resorts or parks
Kona cafe for dinner at the Poly
