You CAN make it a full-day park, but it's never taken us past 2:00pm. (Admittedly, we do all of the "rides" except for the Back Lot tour and American Idol, and see only 2-3 shows out of the 5 or so available. We also don't try to meet characters there.)
We spend the rest of our HS day visiting Epcot or MK to cover one "land" (if we have Parkhoppers), or if we don't have parkhoppers, going to Downtown Disney (dinner at Raglan Road) or to a fancy resort dinner reservation (e.g., Hoop-de-Doo, 'Ohana). Failing that, an evening spent enjoying your hotel pool and/or the outdoor movies is a nice way to end the day.
