If you could eat it all, you can use all of your credits for the trip in the same day. You have a pool of credits that you use until they're gone or midnight of the day you check out, whichever comes first.

Yes as monty explained it, plus there are a number of signature dining experiences and dinner shows that require two "points" per meal.
