Some of that (by no means all) could be explained by this planet being far from the Inner Rim planets so newer tech is expensive and in short supply. Both the First Order and the Resistance make do with some older tech.
I relooked at the Falcon. It does have the square radar dish so that works in the First Order time frame. So I guess the time frame is Episode 7-9. I think the A-wing doesn't really belong but I guess someone is still driving a Model A on the roads too. No Imperial Shuttle or Blockade Runner like the concept art had. It's hard to tell about details since the videos and pictures aren't focusing on the right details.

It's going to be interesting how dedicated they get to the immersive approach. Imagine a land where the rides have no signage or wait times displayed. Will the carts have goods and pricing listed? Will the restrooms have signs or symbols? Will the food service have order here and pickup here signs? Will we have to rely on our smart phones and park maps to fill in the information gap?

Could be. If they are making Wild Space a proper noun--i.e. an actual place--you would think it will play a part somehow.

It's capitalized because in the Star Wars franchise "Wild Space" is a place name, sort of like "The Wild West."

Somehow I think that is just a fan rumor. It's like expecting all the cast members to speak Huttanese. You can't operate a theme park without signs in english. You can't make up a language and expect people to read it by handing out Indiana Jones decoder cards at the entrance. I can see the signage being very stylized but the important information will be in stylized english/spanish.

I could see simple things like pricing being in credits; that 25 dollar t-shirt costs 25 credits, for example.

I think they have their time periods a little messed up here. They show a Resistance X-wing but the Falcon has the original trilogy radar dish. I think I also saw a First Order ship but also an Imperial Shuttle. Also A-Wing would be too old to exist during the First Order since it is a late Clone Wars ship. I'm sure we will see astromechs that don't make sense in the earlier or later period. Just Star Wars nerd nikpicks.
I think you're mixing up the A and V wings. V's in the prequels, A doesn't appear there but appears in the Battle of Endor, and through the Poe Dameron comic series, has been seen shortly before The Force Awakens as a member of Poe's team flies one.

They’re already kind of doing this for Pandora at DAK - though still including wait times I believe. Some minimal confusion as guests get used to the concept, but seems to be working well enough. I think they really used Pandora as a guinea pig to make sure they totally nailed Star Wars perfectly.

According to the Clone Wars cartoon series, the A-wing came shortly after the v-wing. It's was considered an old out of date ship by the Battle of Endor. It shows how the rebels were throwing everything they had at the second Death Star from the ancient A-wing to the modern B-wing and X-wing. Even the Y-wing was seen in the Clone Wars. Hera in Star Wars Rebels flew an A-wing before the B-wing was designed. Her A-wing was a left over from the Clone Wars just like Chopper. I guess it is possible to see an A-wing sitting around considering the Falcon is even older.
