Still we spend for a family of 4 adults close to $3000 per trip.. and thats cutting it close.. VERY CLOSE..

If you think about not only the gas you would use, but the miles you put on your car, I think you'll find it's not worth it. I'm from Green Bay, WI, and we were lucky enough to use my Dad's frequent fliers out of GB all throughout my childhood, but now they've been used up and my friends and I go a bit of a different route.
We fly out of Milwaukee or Chicago if we don't have a lot of money at the time...we leave the car at a friend's house or a Park n Ride. Tickets from Chicago to Orlando are about $100 a piece. So there's $400...once you get to MCO, take a Taxi to whatever you found as your cheapest hotel. Your total is now $480. If the hotel is $50 per night for 2 adults (and even if there's four, we always say there's two...we're cheap), then you're up to $780 (And hardly any miles on your car :~)) Tickets at Undercovertourist.com are about $10 cheaper than if you buy them online, $18 cheaper than gate price (but only if you get 6, 7, or 10 day tickets.)
I just checked Mapleleaftourist.com and they have a deal now where you buy a 4day park hopper and get the fifth day free. I would JUMP on that...seriously. If you only go for a few days...that's a great deal!! ($203x4=$812, or $406(2 adults) and $167 for the kids under 9, tax included!)
Also, at Travelocity, there are hotels in Kissimmee for $282 including tax for six nights.
I would perhaps rent a small fridge and keep sandwich fixins in there...bring granola bars and breakfast bars and cereal...then you only have to buy one counter service meal a day - might only cost you $25 or so if the kids don't eat much, or if you get the cheaper things on the menu. At counter service restaurants, you can also buy all kid's meals...they don't know if your kids are all sitting waiting for you to bring the food back or not. Then it'll be even cheaper. So breakfast bars for breakfast, sandwiches for lunch, counter service for dinner.
