Oh Deb, how I miss Jersey tomatoes (and corn too).

And the sandwich sounds AWESOME!!! I do like that breakfast mix...and it actually works with a Cozy Cone @ DCA idea I got earlier. They make bread cones stuffed with eggs, bacon, etc. i.e. yummy goodness. BUT- what if that cone were made of bacon????

We figured out 2 ways to make it...both involving metal cones normally for making horn style pastries.
1. Wrap the cones in bacon- stand them upright and brush them in pancake batter. Then bake them upright, periodically dressing in more batter so that you eventually get a nice thick crisp pancake coating sealing in the bacon lining.
2. Lay out puff pastry sheets and press strips of bacon into it. Then wrap around the cones and bake.
I might need to make this happen.
