Apparently, the reason why there aren't Haunted Mansions in Hong Kong and Shanghai is because cultural views of ghosts in China are very different than they are in the West. Apparently, having ghosts in a humorous manner is considered offensive.

They could always do what Mystic Manor did and add a Haunted Mansion-esque dark ride without any ghosts or spirits to Shanghai Disneyland.
Halloween is a growing industry in China, including at Hong Kong Disneyland where a scarier Halloween event is held. On the Mainland what you will see is that most content with a supernatural element is framed as a dream or something else as to not run afoul of the country and Party's official atheism.

I think either Mystic Manor or Journey Into Imagination would be the best pick to replace HM for Shanghai.

Neither is likely to happen.

The government wants (smartly, in most instances) to differentiate Hong Kong and Shanghai as much as possible, which is why other than some attractions in Toy Story Land and Winnie the Pooh (hilariously, in light of Pooh's status there now) there are no clones between the two resorts. For that reason, Mystic Manor is a no go.

If anything with Journey into Imagination happens, it will be at Epcot, but even there Disney might use a more marketable or lucrative franchise instead.

They may well (and should) come up with some kind of HM-esque attraction or concept, but it's unlikely to be shared with something that's existed before. They don't want the same old thing, and they are the resort least beholden to what Disney's done before. They want something unique.

Tom Morris made an interesting point in an interview regarding cultural generalizations made by Imagineering. He said oftentimes it'd be one person who says "Oh, the French don't like hot dogs it has to be sophisticated" or something similar, so then one person is generalizing the interests of an entire culture/country and that becomes the basis of WDI's decision making, even if it's not entirely true.

I've often wondered if the Chinese would be just fine with a normal Haunted Mansion.

I think the line experience, while nowhere near as good as Haunted Mansion, Pooh, PPF, or even Mission Breakout, helps a bit in this regard. And uncomfortable? I felt far more cramped on Gadget’s Go Coaster and Matterhorn than on this.
Yeah, I'm a bit bigger than I should be and I felt quite comfortable on on 7DMT
