With more and more stuff closing it's hard to make a day of it without seeing both stunt shows and Fantasmic.
It's a pity Rock n' Rollercoaster and Tower of Terror are in that park- otherwise I'd skip it altogether.
Maybe plan on DHS being your swimming pool day- sleep in, hit the pool, and come to DHS for the afternoon and evening.

Are there really so many closed attractions at hs??
We are not star wars fans and that is the only thing i saw online
Kids love the tower..they will want to go like ten times
And hubby loooves the aerosmith...
We really hope we can make a day of it..we are coming from far far away and dont want to waste our money....

Even with stuff closed, there's plenty to do. Tower of Terror, Aerosmith, Fantasmic, Beauty & the Beast, Little Mermaid, Great Movie Ride, The Muppets, Star Tours, Indiana Jones, Toy Story, Lights Motor Action, streetmosphere entertainment, character meets, and probably a few other things I'm forgetting. If need be, you can always pop out to the nearby Boardwalk and take in the sights there.

Yes i was thinking crystal palace for breakfast buffet but i havent checked opening hours yet...
The only thing left to figure out is where to go for quick service at HS and MK...we are not hot dog fans (casey is out) and there really seem to be very few options at HS!

There are quite a few options, but there isn't as much variety in the menus, I think three places all have burgers.
Backlot Express has some Star Wars themed items at the moment.
ABC Commissary is best for a large amount of seating, but worst for food!
I normally eat at Rosies / Fairfax Fare on Sunset, the burgers are pretty good and they also have ribs and chicken.

No, only one attraction has closed, the backlot tour. The Phineas & Ferb meet has also closed, but a few other meets have opened elsewhere and more are under construction.
If you've never been before it isn't hard to fill a day, with the two stunt shows, three musical shows and the five rides plus all the other bit like Launch Bay, One Mans Dream and the character meets.

If you have been before, then you might not want to watch Indiana Jones for a fith time or see Beauty and the Beast again and this is where the park gets most of its complaints, Animal Kingdom has switched out one of the shows three times but DHS has never changed their musical shows, so the shows feel old and stale

Take the boat from The Studios to The Dolphin. We have had many quick service meals at The Fountain. Great burgers and sandwiches - and awesome shakes and ice cream. Most theme park visitors won't know to try this place because it's outside the park, but we always make the trip to the Fountain when we come to WDW.

Columbia Harbor House gets my vote. Can't believe how good the salmon was there!!

The view of the hub/castle is decent if you get the right table, but otherwise the food and dining area are very bland.

and rarely open..

I was trying to think of things that haven't been mentioned yet.. at HS, we ate at Fairfax Fare on our last trip, and enjoyed it. There isn't a lot of seating, and what it has, is outside and mostly uncovered, (but there is a tree), but it is right next to ToT, RnR and the Beauty and the Beast stage. Backlot express changed to the Star Wars menu after we were there, so we didn't get a chance to try it.. but some of the offerings look fun.

At MK, check out the Liberty Square market, the roasted corn is pretty good. (and another vote for Columbia House. I had the salmon, and was surprised how good it was for a QS place.. )

At AK, Harambe Market is good (but not a huge selection), and as many have said, you really can't go wrong at Flame Tree.

Epcot has lots of options, most of the WS pavilions have QS options, and Sunshine has quite a selection, but with Sorin' down, they have reduced hours.

We always spend just one day at HS, from rope drop to about 2pm -- by that time, we've done everything we wanted. Afterward, here are some options (we've done #1 and #3 and they both made a lovely end to the day):
1 - a special dinner at a resort (e.g., Hoop-de-Doo Revue at Fort Wilderness Resort -- afterwards, you can visit the playground, watch the Electric Water Pageant from the beach, or just enjoy the ambiance)
2 - schedule your HS day mid-week, and spend the evening at your own resort, relaxing, swimming, taking in the outdoor movie or other entertainment, or even popping in some laundry
3 - have a nice dinner somewhere (e.g., Raglan Road) at Disney Springs (f/k/a Downtown Disney), along with some people-watching and/or shopping -- now that Splitsville is open, bowling would also be an option
4 - if you have a "package" with mini-golf passes, go to Fantasia Gardens or Winter Summerland for mini-golf (keeping in mind any applicable restrictions -- I think the passes typically have to be used before 4pm)

In my family's subjective option, the best CS options in each park are:

AK - Flame Tree BBQ for the tastiest food overall; Restaurantosaurus if the weather is inclement and you need to be indoors
Epcot - Tangierine Cafe (Morocco Pavilion in World Showcase) is a perennial favorite, offering something different from the standard fare (e.g., shawarma platters, tabbouleh, baklava); Sunshine Seasons is always a good choice, as well
HS - I wish I could recommend a single CS restaurant here, but I don't know of any. We've tried Backlot Express, ABC Commissary and Pizza Planet and have never had a good experience. The food wasn't affirmatively bad -- just completely blah, McDonald's-quality stuff. We now try to avoid dining in HS if we can help it.

Restaurantosaurus if the weather is inclement and you need to be indoors

Forgot about this one.. I like this place.. it's kind of out of the way, so it usually isn't mobbed.. and as another plus.. it is one of the few places that has self serve soda fountains.. (BoG, and Backlot are the only other ones in the parks I am aware of..) and it has a small toppings bar. Not like Tortuga in it's heyday (R.I.P. plastic cheese ).. but more than just catsup packets and ranch dressing..

And, the kids meals are served in the beach buckets with a shovel.. kind of a fun thing.. but I'm a bit surprised that it is a generic one, not branded at all.. It's not like Disney to not put their mark on something like this..

Like a few other people here mentioned, I would go to Studio Catering. We did not like food at HS in the past, but this last time we tried Studio Catering and we thought it was fine.
My daughter does not like food when it tastes overly processed and even she ate it, lol. And the Desert Pear Lemonade was delicious!!

Yes, it's towards the back of the park.. near the exit to the old backlot tours. lots of covered seating.
