It's all about scheduling. For example, during the afternoon parade in MK. If Pooh and Tigger are in the parade the meet and greets in Fantasyland will be on break because there is a chance a guest could spot both at the same time.
Back to backs at meet and greets change positions backstage as to never cross paths on stage. Usually you talk with your back to back about the line or a cute kid you just met with so you always know when the other is off set.
