Since you made your ADR's before this new policy went into place they CANNOT charge your room or any credit card you may have on file. When making ADR's after the policy, the CM's had to make it very clear what the charge was and you had to verbally agree to the charge.

Your KTTW card will say 3 adults for your dining plan info, they don't check names so yes, technically you could use three adult meals for you, your spouse and a friend and then pay for the kids meal but 3 would be the max amount of adult credits you could use for each meal.
