If you are trying to avoid busses, then any of the monorail resorts would obviously be good choices. If you aren't interested in Contemporary, Poly is beautiful and more kid-friendly (in my opinion) than Grand Floridian. Also agree with the Wilderness Lodge for all of the reasons mentioned by...

How about one fancier night in one of the places suggested by @wdwmagic and @Mickey81, and then doing one night in Epcot? Monsieur Paul is a lovely option in France. But California Grill with a view of Wishes is hard to beat for a really special night.

In my book, a rainy day at Disney is still better than being anywhere else. So, if you have unlimited time at the parks or you aren't on a time constraint... What do you like to do on rainy days? Hang out in a resort lobby? Put on a poncho and brave it like a normal day? Have a few drinks...

Boardwalk for me! I love the themeing, I love the decor, I love the proximity to Epcot and HS and all of the restaurant options there. And I really love walking along the boardwalk in the early evening and taking in all the sights and smells.
