If you are trying to avoid busses, then any of the monorail resorts would obviously be good choices. If you aren't interested in Contemporary, Poly is beautiful and more kid-friendly (in my opinion) than Grand Floridian. Also agree with the Wilderness Lodge for all of the reasons mentioned by...

How much would a conversion of rooms to DVC impact WL? If two floors of the south wing were to be converted, will that significantly impact how difficult it is to book a room at WL?

How about one fancier night in one of the places suggested by @wdwmagic and @Mickey81, and then doing one night in Epcot? Monsieur Paul is a lovely option in France. But California Grill with a view of Wishes is hard to beat for a really special night.
1. The boat ride from MK to Wilderness Lodge. I love that resort so much and pulling into the area just makes me feel like I'm going on an adventure.

In my book, a rainy day at Disney is still better than being anywhere else.

Boardwalk for me! I love the themeing, I love the decor, I love the proximity to Epcot and HS and all of the restaurant options there. And I really love walking along the boardwalk in the early evening and taking in all the sights and smells.
