I do that too. Usually not soup though, chicken and Amish noodles.I am starting to wonder. Am I the only one who buys rotisserie chicken to shred as a cheat for chicken noodle soup?

I can't even describe how relaxing this trip has been.
Hope you're all well..!![]()
DS has band camp next week. Looks like it is going to be hot and humid. He is a section leader, and he has been having trouble getting the Freshmen to bring water for sectionals. Hopefully, they remember next week!My niece is going to be a junior too. She's been at band camp all week.![]()
Just chicken and seasoning? What seasonings? Always looking for a good recipe! That might be a good use of the chicken, I love enchiladas. Often I take a bag of chicken and put it in the crock pot with seasoning and use that for my enchiladas. There is often plenty left over to put in the freezer for another batch or two.
My kinda shop!

Oh my goodness, it's better to say what she doesn't. She knows how to play everything in the brass, woodwind and percussion section. In marching band her main thing is trumpet. Our students have the opportunity to play two instruments for competition band (same for football half-times) so she plays trumpet and kettle drum. In jazz band she plays tenor sax and our school has a steel drum band so she does that too. She does a lot of camps and activities with the Canton Bluecoats of DCI (Drum Corp International). How fun. What does she play?

They're homemade by our local Amish ladies and sold at the farmer's market. That's one bonus to living so close to Amish county, LOTS of good homemade stuff to eat. What makes them Amish?![]()
That's actually my niece. She's been in music programs since kindergarten. My daughter on the hand doesn't play anything. She's in all the academic extras at school. Science is her thing.Wow! I only played flute and trumpet in band. Your daughter is very talented!

I do too. Although, I actually throw the carcass in a pot with a couple of OXO cubes, a bay leaf and raw celery, and convince myself I'm making my own stock.I am starting to wonder. Am I the only one who buys rotisserie chicken to shred as a cheat for chicken noodle soup?
Yummy. Thanks!Well it varies from time to time, and sorry I don't usually measure this. I always sprinkle them with salt, pepper, garlic powder, ground cumin, and ground corriander. Then I put in a little bit of lime juice in, and either a small can of salsa verde or some green taco sauce. Sometimes a splash of tequila but not always. Once I shred the chicken to make my enchiladas sometimes I will smear some cream cheese on the tortillas then put in some cheddar or Monterrey jack, and then my chicken. Then roll them up, and put some of my crock pot sauce and cheese on top and bake about 20 min. If there isn't enough sauce I have been using the Frontera brand by Rick Bayless (Green Chile Enchilada Sauce) to top my enchiladas. Oh, my this is making me hungry. On a side note I like a lot of Rick Bayless' seasoning sauces, especially the texas taco.
