How do you think they determine those times?
The Disney Springs website lists special offerings and happy hours.

Yeah but none of those ideas are dynamic pricing in the way we all know we are talking about.. which is raising prices when demand is high.
Early Birds, Late Nights, etc are discount programs to drive traffic. They didn't exist first and then raise prices when the dinner rush hits...

what i meant by foot traffic is count how many a day average for say a month, if the numbers seem low they might want to adjust prices to increase customers
Costco.com sells 3 of her cakes, 8" for $160 each. 16-22 servings
Costco would drop it if sales weren't good.

Holtermann's Bakery is doing a brisk business these days
I hear they're thinking about adding a Whoopie Pie to their menu.
So we went on a recent visit for lunch. My wife and I and our 22 year old cast member son. Did a walk up and had to wait about 20-25 minutes for a table. No problem with that. We love hanging out on the BoardWalk. Once inside, the place is absolutely beautiful and very classy. I didn't feel like it was pretentious. I was in my Disney T-shirt and shorts and felt perfectly at ease. The service was extraordinary. These people have been trained to deliver top notch customer service and all with a big smile. All three of us thought the food was delicious. It was fresh, perfectly prepared and top quality. We ordered simple things - quiche, turkey sandwich, chicken salad sandwich, so it wasn't exactly gourmet food - but that didn't matter. It was so well prepared and delicious and in such a wonderful environment that we felt it was worth the money. Afterwards, we ordered a slice of cake for the three of us. They are huge, too much for one person, too much for two-three people really. The cake was outstanding. Not too sweet. It was probably the best piece of cake I've had in a restaurant.
So, was it too expensive? So much has been said about the prices and, yes, it was not a cheap lunch by any means. But, I have to say, it was so good and such a top notch experience that we didn't feel like we overpaid. We felt like we splurged for a special lunch. I'll definitely go back.

I’d love to be wrong. Just seems like the prices aren’t sustainable. Boardwalk has trouble holding tenants anyway.

We ate there a while ago. We actually had high hopes before we went. We felt that the food was just alright, nothing great. We've experienced a lot better food at Boma etc. We thought the desserts were nothing special. We thought the desserts were better at the Cheesecake Factory to be honest, and a lot less expensive...

It is crazy how many people are willing to spend such inflated prices. Even being at WDW, their prices are insane. The butter croissants are $3.25 at Les Halles in Epcot and are wonderful. At the Cake Bake Shop, a croissant is $11.00 with a side of jam. Come on, that is ridiculous.
