Disappointing it’s the same vehicles with new wraps. Should we be surprised? No lol. Also disappointing it’s the same track layout, but we knew it was going to be for awhile. Eh at least it couldn’t look much worse than 2.0.
If I recall the concept art it would have been shocking if the vehicles had any significant changes.

The track layout is fine, no reason for it to be changed. However it was designed to a particular theme and the shape and sections were designed specifically for the story they wanted to tell for v1.0. That goes for the changes in speed during the sections, and that also determines the maximum number of vehicles they can have on the circuit at one time, i.e. capacity. They may have starrted out with a capacity target and designed the ride to match but, whatever, the track layout, speed, capacity and number of vehicles are intrinsically linked.

The problem when you want to change a ride's theme (as we've seen with other re-themes that Disney has done) is creating a new story for that new theme to fit it into a ride that was physically custom-designed for a completely different story and theme, and it very rarely fits as well as the original theme did. (Splash's final drop, which made perfect sense in the original story, but explain to me again its relevance in TBA? Although, I guess even the original story was a bit contrived in order to explain the log flume's drop.)

I suspect that with this re-theme they are not going to go through the expense of altering the ride layout (which means new tracks, supports, floors etc to be installed) as well as supplying additional cars if maybe the capacity was to theoretically increase (I think you'd have to alter the size/capacity of the loading platform in order to take advantage of increased capacity by lengthening the track layout or slowing down the two brake test sections for example to allow more time for physical show sets, as well as adding additional cars?), and alter the ride programming etc.

As much as I love the ambient music from v2.0, and I have a soft spot for the vector graphic trees that energise just after the three test rooms, v1.0 was a better experience and worked better with that track layout as designed. Hope they can do something with v3.0 that makes sense.

The track layout is fine.

Not sure what you were expecting. I think most expected the new vehicles with new wraps on the same track with new theming around it. They're cars. On a test track. In a new environment.
