we had a water view room last october at YC, & it was nice taking in the view & watching people walking around. bonus was watching the epcot fireworks at night. also enjoyed sitting on a bench at FQ in any of the gardens. very quiet & relaxing.

Caribbean Beach resort's lobby is wide open, smells amazing (I love Disney scents, don't come for me), and has quick-service nearby. We've spent many relaxing hours there.
Last time we even had characters pop in.

AKL Jambo House - even after many stays, just hanging out in the lobby. There are a few higher backed chairs that are comfortable

AKL Jambo House again- I have a little nook that I call my coffee spot- I usually go there with my coffee and relax as wife gets ready

Wilderness Lodge by the lake as the sun rises - having a coffee

Coronado Springs Tower- Dahlia’s Lounge- having a beer as the sun sets - great views of a lot.
